The Italian chef, Massimo Bottura and the American chef, Samin Nosrat have been listed as two of Time Magazine’s 100 Most Influential People, both picked as pioneers.

Bottura was highlighted in article by the French Artist, JR, who opened a space with Bottura in Paris as part of his Food for Soul project.

“Massimo is reinventing the way that things are done and making it exciting to help people. In the future, there could be thousands of refettorios,” JR said in his tribute.

The presenter of the Netflix show, Salt, Fat, Acid, Heat, Samin Nosrat – who also published a book by the same name – was featured with a piece from Alice Waters who remembered a time when Nosrat taught her to make pasta.

She wrote: “Samin shows us what a beautiful experience it is to understand your ingredients—where they come from, who grew them, how alive they are, how people around the world transform them in delicious, diverse ways.”
