New York’s Loss is Toronto’s Gain as MAsaki Saito …

Toronto continues to cement its reputation as a fine dining destination of real substance with the attraction of one of New York’s leading lights of the restaurant scene, Masaki Saito of Sushi Ginza Onodera.

The two Michelin star chef will leave the Big Apple to decamp to Yorkville, Toronto and open Sushi Masaki Saito. Toronto diners will be able to enjoy some of the best traditional edomae-style sushi in the world from the chef who made Sushi Ginza Onodera an institution.

Edomae sushi uses fish that is marinated, simmered or cured in order to increase tenderness and umami. Toronto isn’t yet recognised by the Michelin guide, but with the city’s vibrant multiculturalism and energy mean it is the perfect backdrop to a burgeoning fine dining scene. Masaki Saito’s permanent move could well be the start of an influx of talent looking for new horizons. Mazaki Saito was drawn to Toronto by friends Jackie Lin and Tsuyoshi Yoshinaga of Shoushin.

The restaurant will open in the spring at 88 Avenue Road, across from Yorkville Village.
