Mauro Colagreco is definitely a chef on a mission in these past months. Arriving third in the World’s 50 Best ranking with restaurant Mirazur, the Italo-Argentine also recently presented the menu for BFire restaurant, at Hotel Barrière les Neiges in Courchevel. This week, Mauro Colagreco is back in the spotlight once again putting his name to the Florie’s menu at the Four Seasons Resort Palm Beach, Florida.
Speaking of the move the chef said, “Palm Beach is an ideal place for me with all of its similarities to my home in the South of France including the environment, the sun and the sea.”
The new US venture, open for breakfast, lunch and dinner, will offer a Mediterranean influenced menu with dishes like hand-cut Iberian ham and “aubergine and mozzarella with parmesan cream, touched by fire in the hearth oven.” Mauro Colagreco has also imagined some slightly more exotic dishes such as yakitori, tandoori chicken and sweet potato lamb, dates and black sesame sauce.
The Mirazur chef will also put his personal spin on the bread whose recipe is inspired by that of his grandmother, served with lemon-ginger oil and presented alongside a poem by Pablo Neruda entitled, “Ode to bread”.
There’s even a water sommelier offering bottles from around the world as well as a host of seasonal cocktails.
