Get excited about this week’s meal plan! It has so many amazing recipes including my family’s favorite pancakes, a Chinese takeout dish that’s better than in a restaurant, and our favorite coconut chicken fingers.
Now on to this week’s meal plan! It starts out with Banana Oatmeal Protein Pancakes, Black Bean Soup, and Slow Cooker Balsamic Beef. Monday brings an Italian Spaghetti Squash Casserole dish and Tuesday is One Pan Mustard Roasted Chicken Sausages with Potatoes and Brussels Sprouts. Wednesday is the most delicious Creamy Garlic Mushroom Chicken and Thursday is General Tso’s Pork. To end the week, meals include Brown Sugar Salmon and Sweet Chili Coconut Chicken Fingers.

One Pan Sausage, Potatoes, and Brussels Sprouts: This one dish meal is full of flavor with crispy potatoes, caramelized Brussels sprouts, and tender chicken sausages all tossed in a mustard sauce that’s so good.
Creamy Garlic Mushroom Chicken: This 20-minute weeknight meal is so easy to make but tastes like something you spent hours preparing. The creamy garlic sauce is rich, full of flavor, yet surprisingly light in calories and fat.
Italian Spaghetti Squash Casserole: This spin on a baked pasta dish is made with spaghetti squash, lean ground beef, veggies, and melted mozzarella cheese. I promise, you won’t miss the pasta.
Protein Packed Banana Pancakes: My family is obsessed with these pancakes and with lots of protein and fiber, they will keep you full all morning.
